Klein Bros. Southwestern Squash Casserole
Ingredients
5-6 lbs. yellow squash
2/3 cup Klein Bros. Salsa Verde
2 tsp. ground cumin
3 cups corn chips
1 can cheddar cheese soup
2 T. cooked crumbled bacon
1 tsp. salt
1 egg
4 T. melted butter
½ tsp. ground black pepper
3 cups cheddar cheese
1 tsp. onion powder
Instructions
Preheat oven to 350°F. Spray a 9 X 12 glass dish with cooking spray. Cut squash into chunks and boil until soft. Drain. Mash squash while in colander and allow liquid to drain out. Crush corn chips in a plastic bag with a rolling pin or wooden spoon. Beat egg. Mix all ingredients together in a bowl. Pour into rectangular dish. Bake at 350°F for 45 minutes. Enjoy!
